The Big Cheese
Woolloongabba's Brewhouse was developed by Grant after a life spent perfecting each and every element of this fabulous venue, from the light fittings to the lunch menu. He's our resident beer-tasting, food sampling, big cheese who holds the reigns and calls the shots. His love of hospitatility life is what sets this venue apart.
Andrew
Head Chef
Andrew McCabe, is a Brisbanite through and through. A 4-year Cooking Apprenticeship at Royal on the Park where he trained under Gregory Devine, led to Andrew fulfilling his lifelong dream of a 2-year working holiday in Ireland.
His return home to Australia heralded his launch into upper management kitchen roles around Brisbane, most recently at the Riverside Hotel, Hotel Chino, and Spoon in James Street. We welcomed Andrew into the fold early in 2011. His passion for using fresh ingredients and local suppliers becomes obvious when you sample some of his excellent food.
Johann
Head Brewer
The newest member of our Management team, Johann van der Walt, makes up the international component of our team. Born and raised in South Africa, Johann first developed a love of beer and brewing whilst living in the UK and travelling throughout Europe.
The pivotal point in his career came when he turned his back on Dentistry and decided once and for all to turn his passion for the amber liquid into a career. Now in his final year of studying a Graduate certificate of Brewing at Ballarat University, Johann’s interests lie in the creation of new recipes. His Robust Vanilla Porter was a recent award-winner in the Queensland Amateur Brewing Competition.
Michelle
Functions & Marketing
Michelle began her professional career working in 5-Star Hotels in both Rooms Division and Food and Beverage after completing a Diploma in Hotel Management. A 12-month Hotel Management traineeship led her into the field of Marketing where she has since carved out a career in marketing for holidays and hotels over a span of 13+ years.
Together with husband Grant, Michelle acts as Director of Brewhouse Brisbane and Brisbane Brewing Co., and summarises her workload as marketer, trainer of new floor/service staff, and fighter of the office paper war.
