When a friend of ours mentioned that he had a jujube farm near Inglewood (about an hour out of Brisbane) and that this year he yielded a particularly good crop, we couldn’t help but wonder what would happen if we added locally grown jujubes to our beer…and here it is!
What is a jujube you ask? It’s a small dark red fruit, with mild date-like sweetness and a slightly tart undertone of crisp apple.We baked ours overnight and pressed them down into a concentrated syrup to add to our sour base. The result: a refreshing and tart sour.
